More documentation updates

* Change 'dialog box' to 'dialog' (no redundant)
* Change 'Level Selection' dialog to 'Select Game' dialog (from GUI)
* Fix some gui menu items (from GUI)
* Revert 'except for the light bulb' comment (is right)
