make sure we always show a size on posix

some fuse implementations (e.g. apfs) do not return a block count
(erroneously IMHO) which would result in us showing no size, instead
defer to st_size when that seems indicated.
this involves a bit of guessing but generally if we have no blocks but
still show a size that should mean the block count is nonesense since
indeed even symlinks occupy blocks
